TACO SALAD
Because of the necessity of doing away with commercial salad dressings using either omega 6 type oils or lots of sugar or both, it can take some adjustment to eating salads. One of my favorite ways for years has been the use of Mexican salsa and taco meat with large chunks of tomato and onion on shredded lettuce. I now have gone from simply shredded lettuce to a variety of mixed salad greens. Onions have many body building and cancer fighting nutrients as do tomatoes and I try to eat as many as possible, as often as possible. Do not eat deep fried corn or flour taco shells with this as, once again, the goal is to eliminate omega six oils from the diet. Also, you are combining a starch (flour or corn) with a protein which hurts the digestive process.
Because we need to also think about greens that are most appropriate for fighting cancer/building up the immune system, plan on combining as many as possible in your basic salad mix.
2 or 3 cups of mixed greens greens per person
1/4 coarse chopped onion
1 Roma tomato coarse chopped
1/2 cup fresh salsa
3 to 4 oz taco meat (optional; tastes fine without)
