STIR FRIED BEAN SPROUTS

This is one of those usually quick and easy things to fix that is quite enjoyable if you are an Oriental food fan. You can use any form of meat or no meat at all, if you so choose. My personal preference is usually to add about a dozen salad sized shrimp or several ounces of crab meat.

Prepare a medium bell pepper by washing and cutting into pieces about 1" square. Section one medium onion. Slice up 2 ounces of Shittakii mushrooms. Chop 1 stalk celery in about 1/3" to 1/2" long pieces. Wash 8 to 10 ounces of FRESH bean sprouts.

In a hot wok or other large skillet, place about 1/4 cup pepper oil and add the celery, onions, mushrooms and green peppers. Stir fry until the the onions are translucent and the vegetables are very bright. Add the shrimp (or other meat choice if desired) and stir for about 1 to 2 minutes. Add 1/4 cup rice wine, 2 tbs soy sauce, and bean sprouts. Stir 1 to 2 minutes or until done. Serve immediately.
